A delicious and easy Tex Mex chicken and zucchini recipe that can be made in just one pan.

  • 2 boneless skinless chicken breasts
  • 2 medium zucchinis sliced
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Season the chicken breasts with chili powder, cumin, garlic powder, salt, and pepper.
  3. Add the chicken to the skillet and cook for about 6-7 minutes on each side, or until fully cooked.
  4. Once the chicken is cooked, remove it from the skillet and set aside.
  5. Add the sliced zucchini to the skillet and sauté for about 3-4 minutes, or until tender.
  6. Slice the chicken and return it to the skillet, mixing with the zucchini.
  7. Serve warm.
