A rich and comforting tomato tortellini soup perfect for chilly evenings.

Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 can (28 ounces) crushed tomatoes
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1 package (9 ounces) tortellini
  • 2 cups fresh spinach
  • Salt and pepper to taste

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the onion and garlic, and sauté until the onion is translucent.
  2. Pour in the vegetable broth and add the crushed tomatoes, basil, and oregano. Bring to a simmer.
  3. Stir in the tortellini and cook according to package instructions until tender.
  4. Add the fresh spinach, and cook until wilted. Season with salt and pepper.
  5. Serve hot and enjoy your warm bowl of soup!

Notes

  • For extra richness, add a splash of cream before serving.
  • You can also add cooked chicken for added protein.
